    Default It's finally Chili weather

    I love when we get our 3 days of cold weather! I have been cooking all day and now have a full week worth of feel good food and the house smells great.

    Made a huge pot of grilled chicken tortilla soup and a big batch of chili. If it stays cool then next weekend the roast is comin out.

    Just got dne BBQ'ing definitely it's cold and windy ... Not too much fun maybe it's just the beginning that's why!!!!!

    2 large boneless chicken breasts - I like to grill them, but you can cook them how ever
    24 oz crushed tomatoes
    big container of chicken broth
    2 tbs chili pepper
    1 tbs cumin
    1 tsp oregano
    1/4 cup fresh cilantro
    4 - 6 cloves of garlic minced
    2 tbs fresh lime juiced
    1/2 to 1 cup diced onion
    1 can black beans - drained and rinsed
    1 can white hominy or substitute rice if you wish
    1 cup cooked corn
    2 tbs olive oil
    Sliced thin corn tortilla strips fried crisp ir store bought

    I think I remembered everything.

    cook chicken and dice it up once done

    olive oil in large pot
    put in onion and saute till soft
    put in garlic
    then put in spices, lime juice, broth, and tomato
    simmer for about 20 to 30 minutes
    then put in corn, hominy, beans, cilantro, and already cooked chicken
    simmer for another 30 minutes

    I like to put mine in a bowl with monterey cheese on top, sliced avacado, and lime wedges on the side.

    Chili recipe is a secret. I could tell you, but you wouldn't have time to enjoy it. LOL
