Never owned a coffee shop but I have lived in Hawaii and 100% Kona has always done the job. Here in SA I haved appreciated World Market's selection of South American blends and HEB has a decent selection of whole bean South American. Grinding your own is a must, burr grinder if you can, but I've gotten by with a normal $9 two blade as well. Get a brass filter also, way more effective IMO and less waste of paper. My ism... if a coffee can not be enjoyed black, then it isn't worth the time to prepare or the money. There is nothing wrong with creamer and sugar but they should be used as compliments, not masks. Two cent deposit.
