I used to have a coffee shop! And I love coffee but I don't drink it everyday! LOL. I could go on for hours talking about coffee but I will try be brief! And to the point!
Coffee: In my opinion all of them are good but they have to be fresh and brew it right!
Roasting: Roast the coffee bean and let it sit for 2-3 days. Keep it air tight! NO REFRIGARATION! You don't want humidity on your beans. If you are going to roast, roast using hot air. And a lot of movement while roasting.
THE COFFEE KILLER is the Air = Oxygen. If you have it at room temp and it's air tight, then should be fine.
Grinding: Grind right before brewing! If you grind it before, then oxygen will attack every single particle of the coffee! And what you want is to grind it right before so what ever oxigen that had affected the bean, only affected it on the outside layer.
Make sure the blades are sharp and have no oils in them! Other wise you will be smashing or tearing apart the grains and the flavor would not be the same.
Brewing: Temperature and the time that the water goes through the coffee is super important! In a double shot of espresso the water (2oz) has to go through the coffee with in 18-24 sec. If less, will be weak and no flavor. Ir more, will be burned and bitter.
SUPER IMPORTANT: ( LIKE IN OUR REEFS ) THE WATER QUALITY IS THE MOST IMPORTANT THING!
In a shot of espresso only 6% of it is coffee and everything else is water! So if you have a very good water quality and all the previous elements are right, your coffee will be spectacular!
Same way with the regular coffee, use the best water quality! not tap water!!! please! LOL.
Techniques:
I love Espresso and I know how to prepare it and do it right! But I am not going to go there because it's a LOT!
But for all other people that likes just a regular cup of joe, my favorite methoth is Chemex! Get a fresh roasted coffee, grind it properly, get the perfect water temp, and use the best water you can get....And you will experience the best coffee you ever had!
Do your research on how to do it and where to buy it! 100% Recommended!

Never owned a coffee shop but I have lived in Hawaii and 100% Kona has always done the job. Here in SA I haved appreciated World Market's selection of South American blends and HEB has a decent selection of whole bean South American. Grinding your own is a must, burr grinder if you can, but I've gotten by with a normal $9 two blade as well. Get a brass filter also, way more effective IMO and less waste of paper. My ism... if a coffee can not be enjoyed black, then it isn't worth the time to prepare or the money. There is nothing wrong with creamer and sugar but they should be used as compliments, not masks. Two cent deposit.

I am reading my post and my intention was: All coffees are good when you try to do as much as you can ( the good things) when brewing coffee. Obviously you can not like them all and every one is different. Also my intention was to share the little knowledge or experience I learned while I was in the coffee industry. I am not an expert or guru; but those are the basics of just brewing good coffee! Happy Thanksgiving!
PS. The only US soil that can and is producing coffee is: Like Johnyardavid said: Hawaii. Very good coffee but because it's geographic location it's expensive compared with other single origins coffee.
PS2. Correct Johnyardavid: The blades are called burrs and please make sure they work perfectly! and they are sharp!
