I buy the ones from Walley World and from HEB and they have always been fine. I've bought one of the pre-seasoned ones at HEB once just to try it out. After smoking it for about eight hours that thing just fell apart in your mouth.
The secret to getting a good brisket is making sure it's not too stiff, of course this is only the large ones in the vacuumed bags that aren't pre-trimmed. Too stiff and you have too much fat on it and your paying for all that. Also smoke them with the fatty side up.

I shop both wal-mart and HEB. If its usda choice i smoke the #blank# out of it speaking of which now i need to get one to smoke lol. I smoke mine fatty side down but yeah you don't want a tough one. i grab the non trimmed ones and try to fold it in half to more it folds the better.

Try smoking it fatty side up. All that juice keeps the meat from getting dry and man do those juices just flow out when you cut into it.

have to give it a shot brew next time i smoke one i usally smoke mine for 10 to 12 hrs really slow and man it falls apart.
