The conventional wisedom of day suggests you use either just inch depth or 3 1/2 inches or more. Don't use a depth between 1 and 3 1/2 inches. I'm personally not a fan of DSBs any more. But without it, you need another method of getting nitrates out of your system, as you probably know. I would go with 1 inch in the display, and maybe 4 inches in part of your sump.
If your 120 is 24 * 60, you need 1440 cubic inches for 1 inch depth.
If your 55 is 48 * 12, you need 576 cubic inchesfor 1 inch depth (if you cover the whole bottom).
I have 2500 cubic inches sand and 1155 cubic inches crushed coral.
You could go with sand in the display and crushed coral in the sump. Different grain sizes encourage different types of critters.
