Taking of peppermint shrimp on jetties ILLEGAL???

As noted above, if you take them on the beach side of the jetty, you should be OK.

That's OK. Most of the spots are on the beach side of the jetties (16 Spots) anyway. I only know of 4 spots on the channel side that have a good amount of peppermint shrimp.
