Stephen - is that having the calendar on the exchange in the public folder or is that using the shared calendar function and it hosting on someones computer? I think that is what we have to do, just a matter of someone creating a new calendar and somehow transferring over all the info from the old one. And yes, it has been fun trying to figure out this new Outlook, bad enough figuring out these new laptops with all the new stuff they threw on them.

That's using the Public Folders version. We have an exchange server at my house that serves 100 users.
I just tested it here. You create the calendar in the public folders, then right click it click Add to Favorites. That will create a local copy and keep it sync'd when you connect.

Outlook must be run in Cached Server Mode to run correctly on a laptop or remote user. You can only see public folders if they are in your favorites (didn't I say that above?)
You need to adjust the account settings for the exchange account:
