I should have known about this last saturday. My 8yo caught a small Bonnet Head Shark. About 18", too small and had to be released, but the Black Tip Shark was legal and stayed for dinner.Originally Posted by BA

Black Tip is considered the best eating shark species. I soak it in salt water overnight before I cook it.

Firm, boneless, white meat. Excellent on the grill! Mine was only 28" so I just filet him. Some of the better Seafood places do offer Shark Steaks.
Im getting hungry now... we took our blackTip to a restaurant in Port A and had it fried and seasoned . yum yum I cant wait to catch another!
The key to cooking shark is to do it quickly. If you grill it, do it on a very hot fire so that it is seared. Otherwise it can come out very dry.
