The taller the reaction chamber, the more bubbles and bubble/water contact time, thus, more protein removal.
That's why the old air driven counter flow skimers got to be rediculously tall. You hear stories about reefers putting them in their basement and putting the tops through the floor next to the tank.

The newer centrifugal design seem to go for greater diameter rather than height or greater diameter and height.
