Default GFO and Carbon in large buckeye housing? How to?

I have a three 20"x4.5" housings with 1" inlet/outlet from buckeye that I am thinking of turning into a GFO and Carbon filters. I think I have a few smaller ones I may be able to use as well but not sure at this moment. One setup I want to run it on is 120g. The other setup is ~600ish gallons with huge bio load. What would be the recommended flow rate and amount of media I should use for those setups? Both tanks are well established for least 1-2 years. Would it be better to just buy a smaller housing kits for GFO/Carbon?

Also, does it need to be fully fluidized or is it similar to DI media where the water flows through it?
