    I grill with gas and add oak or post oak chips for flavor. If I'm slow cooking a brisket, I only use oak or post oak if I can find it. Mesquite is too strong for my liking.

    Im grilling filet mignon shish-ka-bobs with pineapple, bell peppers, onions with salt, pepper, and EVOO right now. Yum!

    Appreciate all the advice. I'm going to try the 2 zone cooking y'all mentenioned. Got a recipe for grilled chicken w/pineapple slices that I'm going to try. I'll try the mesquite once I'm out of the current coal I have.

    The mexican lump charcoal is my favorite...great for grilling!
