sounds like to this point your filtration is not enough to handle your bioload, its always tricky adding more rock but at this point i would double your liverock and add some starter bacteria to help speed up the cycle process

Cycle, or biospira for the starter bacteria! Also, there is some chemical additives (like carbon except it remove ammonia) you can use.

I agree with the above. A water change might help. I don't want to sound like an butthole but your tank is too "young" for fish. A month old and only 25Lbs of rock is not enough. I hope you're not getting this advice from a LFS
You say you have a 75 gallon overflow; you mean it is rated for a 75 gallon tank or flows 75GPH? If it is rated for a 75 then you're OK with that. But what's in it? Bioballs (hope not) nothing, rock rubble?

Another point is you have an eel which can be messy eaters and therefore they leave food lying around which could throw your tank out of whack (while it's still cycling) another thing and I hope you already knew this. Your sexy shrimp eat starfish.

Maybe take the fish back to the store, get some starter bacteria (any of the above listed) and depending on your filter system more live rock. The rule that I go by (some will argue this) is about 2.5Lbs per gallon.
    Good Luck

if you need to drop nitrite and ammmonia levels quickly best way is alot of prime it will knock it out temp. however get some buckets 1 fish per bucket and change their water every day til tank is stable by taking the advice above as the saying goes only bad things happen quickly is saltwater so paitence also seeing how you just joined i did about amonth ago these folks know what they are talking about the people at the LFS's are jack@#%( so keep asking questions see if someone nearby will trade your fish for rock grab some biospira and give it a few days
