What are the blocks that fall out of starfish?

When my harlequin shrimp take apart the starfish, I notice these little white squares that just just pile up on the sand? What are they and are they harmful in my tank?

I think they are the skin segments.

should i be worried about leaving them in the tank?

I wouldn't worry with it. There is a reason they weren't eaten which means they likely won't add to your bioload.
