Should normal store bagging be good from Austin back to San Antonio or would a 5 gallon bucket with an airstone be better?

Should be fine. I've kept stuff for a few hours in bags with no ill affect.

normal bagging will work fine. you may want to put the bags in a styo cooler or something to keep the temp pretty constant tho
