I just bought two 3" fans and one 4 1/2" fan for my canopy from Altex. If I have the two 3 inch fans on each side, one blowing air in, the other blowing air out, and the 4 1/2" fan on the back blowing air out, will they be enough to keep a 30 gal with one 250 W MH cooled?

I run a single 4 inch fan on my 2 250 MH bulbs and they stay plenty cool. The hood is sealed except for an air inlet and the air outlet, where the fan is mounted blowing out.
If your canopy is sealed you only need to move air in, or out, not both. Think about a straw. You don't have to blow on one end and suck on the other to create air flow.

Try removing the glass top. That usually traps heat in the tank.
