I got a couple to go after aiptasia and I had to do a couple things. first I had to not feed the tank for a couple days, or really cut back portions for only fish. and second I moved the rock with aiptasia down to the sand bed ( if it was ontop of a stack) .

Make sure they are Lysmata Wurdemanni not Lysmata Rathbunae. L.B. are the ones with the black tail and they have never eated Aiptasia for me. L.B. are the ones usually sold at fish stores. You want L.W. They have a tail that has the same colors as the rest of the body and they tear Aiptasia up. These are the ones people bring back from the coast. Note, Rhynchocinetes durbanensis, or Camel Shrimp is vaguely similar but not what you're looking for.
