How hard are these to take care of and what all do they need to thrive?

They can be quite difficult, and are not considered a starter coral. In years past, Elegance were fairly hardy, but over the last 10 years or so they have become much more difficult to keep because of Elegance Wasting Disease. The cause for this is unknown AFAIK. Their natural habitat is lagoonal, high nutrient systems with muddy bottoms and low flow. Some folks (very few) have had good luck with them, but for most folks they just will not live. Not something I would spend my money on.

Yeah it's not ready yet and I probably won't put anything like that in it till January. I've got my eye on some zoas, palys, mushrooms, leathers, duncans, and a candy cane. I don't know of anything else that I could start with but I want to add some lps in jan or feb.

If you really want one I would go with the Australian collected

Acans, or any brain for that matter, is usually a pretty good starter in addition to what you have. hammerheads, torches, there are a ton of LPS options, depending on what you end up with for flow and lighting, montiporas and birdsnests, are pretty easy SPS
