I'm having to replace the water line to my house because original black pvc has developed 2 leaks in the past 6 months.Any problem with replacing the plastic pipe with copper that was recommended by plumber? Will this have any effect on water supply to RO/DI system for making my own water for tanks?

No this will not have an effect on water for your RO/DI unit. Copper for the most part these days, are run through new homes for water lines. Copper only matters when it comes in contact with saltwater as it corrodes the piping and causes issues then.

If you are talking about from the meter at the street to the outside of your home to the stub out run schedule 40 PVC. Depending on the distance you might want to upsize and definitely alot cheaper than copper.
