I have been doing lots of searching on the site just reading up on past information, and came upon a few threads where people spoke of freshwater dipping. What is this good for? When is it done? How is it done? I just stumbled upon it and had never heard of anyone doing it before. Someone wanna clue me in?

Well it is a way to treat sick fish, I have used as a last resort. Some people do a fresh water dip on all new fish in hopes of preventing flukes and ich and other bad stuff from entering tank. However ich has been proven to be in just about any tank and is part of a balance reef in nature. (balanced does not mean causing disease)
The way I have done it is to take R/O and used a buffer to bring pH to the range of your tank. Make sure temperature is close also. Place fish in water,(would have to read what time people suggest) remove fish after a brief dip and hope you killed the bad guys. I saved a tang one time with this that had developed a bad case of flukes after my cleaner shrimp died. I have also lost fish after doing this too. I might use it early if I was for sure flukes where the problem. Just keep a cleaner shrimp and you don't have to worry about that.

I did receive advise from my LFS to do a 5-10 second FW dip to knock the flatworms off my mushrooms. True to make the PH and temp near the same. You know, it worked!! The mushrooms looked like ca-ca for a little bit, but back they came. I just did it on my mushrooms and palys...but now I am more comfortable with an iodine dip instead....you use SW and follow the directions on the Lugols bottle.

I use RO w/iodine dips for treating all incoming zoa frags/colonies. It kills all nudis (but not eggs) and other zoa pests.

Do you leave it in there for a long time or just a short dip?

Exactly. Best method to stop nudis. I've usually done a 15 min salt water/lugols dip followed by a 10-15 sec freshwater/lugols dip on incoming corals. Seems to work for me.

I leave them in for a minute or two, constantly swishing it around to dislodge any beasts.
