My 10 foot 380g is not level. Not causing any problems but it bothers me and has overflows on both ends so one does not drain well. Question is if I shim up one end it may leave a small void in the middle. Do you think this may cause stress in the middle and lead to problems?

I would shim all areas that would be lifted from where they are now to make it level.

Shim the stand and not the tank. Unless it the top of the stand thats not level

I was wanting to level the stand, only thing I cant figure is I can put a level on the tank and it shows to be almost level, however the water level is almost 3/4" different from side to side.

Don't know what your using, but really won't show on one of the little levels. Need to use a big 4ft+ one. Or lay a (Known Straight) board down end to end of the tank then check. If you don't measure the whole tank those little hand levels won't show you the difference end to end on the tank.
Is the tank empty? I "leveled" my tank when I first put it up, just to find out the trim around the top wasn't straight. So level the bottom and the top.
