What does it mean for a thermometer to be certified? Who does it? Have you checked any regular thermometers to see how far they are off?

Certified Thermometers, like any other type of certfied test equipment, all of the specs are traceable to a national database. You use certified test instruments to check the accuracy of same type equipment. I hope that helps.
