which ballast is better? will the probe start run the xm 10Ks?

I have Probe start, but if I did it over again ($$$), I think i would get pulse start. Ushio lamps have always worked on probe, but recently are having difficulty - it is about a 50/50 mix according to Premium Aquatics. Pulse start will run any lamp (other than HQI, I believe), but you have the option to buy bulbs that "require" pulse ... and they are "Instant" on, not the slow-glow you get with probe start.
