Does a DSB have to be with the fine sand like southdown? I hate it, it blows everywhere and gets on everything. I would much rather have a coarse sand like special grade reef sand. Would I be shooting myself in the foot by getting this? I do plan to have a DSB on my new fuge, which will be rather large as well.

Deep sand bed in the fuge a couple 2/3 inches in the tank, different sized particles is said to be better, but if there is too much difference the finer particles will ALL make it to the bottom anyway. Hope that helps.

When should I change it? Maybe I can use the current southdown for my new fuge, and get the bigger particles for when I move.

That will work as well as seeding the new. Change it when you go to set it up where you want it.

speaking of which, I want to add a bag of sand or two to my tank to increase depth.

Not southdown this time, that stuff is nice, but creates mini sandstorms if the fish kick it up looking for food.
